A lake the colour of strawberry milk, 35 km northeast of Dakar. The pink comes from Dunaliella salina, an alga that makes a red pigment to soak up more sunlight, and it is strongest in the dry season from November to May. The water is up to forty percent salt in places, which is Dead Sea territory, and about three thousand people work it: they wade in for six or seven hours a day and cut salt off the bottom, some 38,000 tonnes a year, rubbing shea butter into their skin first because the brine would otherwise eat it. That salt is what preserves the fish for thieboudienne, the national dish. Senegal.
