The largest excavated underground city in the world. Under the soft volcanic tuff of Cappadocia in Turkey, people cut a warren eighteen storeys and some sixty metres deep, with stables, wineries, chapels, ventilation shafts and great round stone doors that could be rolled shut from inside; as many as twenty thousand people could shelter here from raiders.
